Halloween Soup…
Ingredients -
Garlic - to taste
Big onion
Carrots - the sweeter the better
tbsp Olive Oil
tbsp Herbs de Provence
2 tins Tomato’s
Stock - either with stock cube or chicken stock [add to get the right consistency]
Red Lentils - 2 tea cups full
squeeze of tomato puree
squeeze of tomato ketchup
Chilli to taste - dried
Salt & Pepper to taste
To serve -
squeeze of lemon juice & a sprinkle of parsley
Feta cheese
The Method..
Cook the onion with the olive oil, add the garlic & a big splash of stock. Add the tin tomato’s, herbs, chilli cook through - add more stock to get the consistency of the soup - not to thick, but not to thin either! Add lentils, they cook in 15 - 20 minutes. Add all other ingredients and adjust to taste. Blitz in blender. Take off heat & add a squeeze of lemon juice. Serve with Feta cheese & crispy bread. Have a Happy Halloween …
