I have always like vegetables & the older I get - the more I like them, because they are so versatile. My new thrill is ZHOUG! Not only is the name fantastic - the flavour is divine and it is super ‘multitalented’ it goes with everything! It is a middle eastern favourite which is used as an accompaniment to various foods - Veg & Protein alike!
INGREDIENTS
4 fat cloves garlic - roughly chopped
2 packed cups fresh coriander [ 2 decent size bunches, mostly leaves but skinny stems are ok too!]
4 medium jalapeños, seeds removed but reserved, I have also used more chili flakes, when I want this flavour and don’t have chilis in the fridge!
1 teaspoon fine sea salt
1 teaspoon ground cardamom
¾ teaspoon ground cumin
½ teaspoon red pepper flakes, more to taste
Extra-virgin olive oil - enough to give the sauce a smooth pourable texture
I like to add a big dollop of mint sauce to it - [not traditional - but I like it & that is the point of cooking!]
Blend in a food processor - while running the food processor slowly drizzle in the olive oil. Scrape down the sides & mix until the sauce is mostly smooth.
